Strawberry Spinach Salad


This refreshing and delicious salad is the perfect summer meal. The sweet strawberries, creamy feta cheese, and crunchy almonds are all balanced out by the tangy apple cider vinegar dressing. It's a simple salad to make, but it's sure to impress your guests.

Ingredients

  • Dressing:
    • 3/4 cup mayonnaise
    • 1/4 cup (scant) honey (3.5 Tbsp)
    • 3 Tbsp apple cider vinegar
    • Few pinches of salt, to taste (optional)
    • 1 Tbsp poppy seeds
  • Salad:
    • 10 oz baby spinach
    • One lb. fresh strawberries, hulled and sliced
    • 1/2 cup sliced almonds (optional)
    • 4 oz feta cheese, crumbled (optional)

Instructions

  1. Prepare the dressing. Add the dressing ingredients to a medium mixing bowl, and whisk until they're well combined and smooth.
  2. Layer the salad. Place half the spinach in a salad bowl, followed by half the strawberries. Add the almonds and feta if using. Repeat this step, layering the remaining ingredients on top.
  3. Toss. Pour the dressing over individual servings or the entire salad if you plan on serving it immediately. Then, toss to combine before serving.

Tips

  • To enhance the salad's taste, gently heat the almonds in a skillet without oil over medium heat for approximately 5-7 minutes until they turn a delightful golden brown and release an enticing aroma.
  • If you don't have poppy seeds, substitute one tablespoon of chia seeds or 1/2 teaspoon of ground mustard.
  • To make this salad ahead of time, assemble it to the point of adding the dressing. Cover and refrigerate for up to 24 hours. When you're ready to serve, add the sauce and toss to combine.
