Ingredients:

    • 1 cup heavy cream
    • 1 cup whole milk
    • 1/2 cup granulated sugar
    • 1/4 cup unsweetened cocoa powder
    • One teaspoon vanilla extract
    • 1/4 teaspoon salt
    • 1 drop of mint extract (optional)
    • 1 cup semisweet chocolate chips

Instructions:

    1. Combine the heavy cream, milk, sugar, cocoa powder, vanilla extract, and salt in saucepan.
    2. Continuously agitate over medium heat until the sugar has dissolved and the mixture is heated but not simmering.
    3. Take off the heat and allow to chill slightly.
    4. Stir in the mint extract if using.
    5. Refrigerate the mixture in accordance with the ice cream equipment manufacturer's instructions.
    6. Once the ice cream has solidified, incorporate the chocolate morsels.

      7. Serve immediately or preserve for later consumption.

Tips:

    • For a more intense mint flavor, use two drops of mint extract.
    • You can use any type of chocolate chip you like. I like to use a mix of milk, dark and white chocolate chips.
    • If you do not have an ice cream maker, you can chill the mixture in a shallow dish and stir it every 30 minutes until it is completely frozen.

Enjoy!
