Jollof rice is a
beloved West African dish with rice, tomatoes, spices, and herbs. It is a
flavorful and hearty meal that is perfect for any occasion.
Ingredients:
- One tablespoon of vegetable oil
- 1/2 cup chopped onion
- One teaspoon of minced garlic
- One teaspoon of ground ginger
- One teaspoon of curry powder
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- One can of diced tomatoes, undrained
- 1 (15-ounce) can of tomato sauce
- 2 cups long-grain rice, rinsed
- 4 cups chicken broth
- 1/4 cup chopped fresh cilantro
Instructions:
Over medium heat, warm the vegetable oil in a big pot. Add the chopped onion and simmer for 5 minutes or until soft.
Stir in the minced garlic, ground ginger, curry powder, cayenne pepper, salt, and black pepper. Cook for an additional 1 minute.
Add the chopped tomatoes and tomato sauce to the pot. Also, add the rinsed long-grain rice. Once the mixture boils, the heat should be reduced.
Cover the pot and let the jollof rice simmer for about 20 minutes or until the rice is cooked.
Add the freshly cut cilantro after adding the chicken broth, stirring everything together, replacing the lid, and allowing it to simmer for ten minutes. As a result, the rice might mellow out and take on the flavors.
Remove the pot from heat once the rice is cooked and the liquid is absorbed.
Serve the jollof rice
hot, and enjoy!
Tips:
If you prefer a
spicier jollof rice, add more cayenne pepper or a pinch of habanero pepper
flakes to increase the heat.
To prepare the recipe
