Ingredients:

  • Two chicken breasts chopped into bite-sized pieces
  • One red bell pepper, chopped into large chunks
  • One onion, peeled and sliced into squares
  • 1 tbsp sesame seeds
  • Small bunch of coriander/cilantro, roughly torn

Marinade:

  • 2 tbsp vegetable oil
  • 2 tbsp sesame oil
  • 2 tsp minced garlic
  • 2 tsp minced ginger
  • 1/4 cup low-sodium soy sauce
  • 3 tbsp honey

Instructions:

  1. Combine all the components of the marinade within a bowl.
  2. Place the chicken in a bowl and pour on three-quarters of the marinade (reserving the rest).
  3. Place in the fridge (covered) for an hour.
  4. Thread the marinated chicken on skewers along with pieces of red pepper and onion.
  5. Place the skewers on a smoking hot grill or BBQ, and cook for 8-10 minutes, turning occasionally until cooked through and the chicken is no longer pink in the middle.
  6. Apply the reserved marinade by brushing it onto the food item during cooking.
  7. Serve with sesame seeds and coriander/cilantro.
